In simple terms use the same gear and flies as you would for stockie rainbows and cast down and across. The best fishing will be at night and this will give you a whole new dimension to your fishing.
Good flies are Medicine, Sweeny Todd, Alexandra, Stoats Tail and anything black and silver. Tie them sparse and slim, hairwings are best and plastic tubes are also good. With fresh fish you can use a pretty big fly, 2" tube or No.6 l/shank singles are not too big, but as the water level drops and clears you need to drop the size a little.
Takes are usually positive but occasionally you get tail nippers or very soft takes. If all else fails pull a muddler across the surface making a v-wake and you might get the shock of your life!
Some will say floating line and there's nothing wrong with that but I prefer to use a slow intermediate as there's no wake and if the pool is deep I'll change to a slow sinker. A floater with various Polyleaders will work OK though.
Sea trout can be very spooky so you need to wade quietly and drop your flies without too much fuss and it is better to sacrifice a little distance for neat presentation.
A couple more tips, 1) check out the pool(s) in the daylight to see access points and any deep holes or rocks, 2) measure a cast to the far bank and mark the line, you'll lose all sense of distance at night, 3) don't shine a bright light on the water, use a red light as this is OK and won't spoil your night vision. Finally 4) it might be better to use a single fly to start with but don't go to more than two as tangles will really mess your night up. It's a good idea to make the dropper a few sizes smaller than your point fly as this might give a clue as to what size is best on the night.
Enjoy! Most who have tried it would think it is the best fly fishing.
