Default Sea Trout Platter

I caught my first sea trout last night, needless to say it was an amazing experience.

I'm thinking about preparing it for a platter at my god daughter's christening party next weekend and am hoping for suggestions as to what the very best/poshest/most excellent way to prepare, cook and present it would be?

The fish weighs about 4lb...

At one of my weddings the sea trout had been steamed and then all of the scale / skin removed and replaced with tiny scales of cucumber, a brace were done like that and set upon a mirror platter with aspic jelly to one side holding various other sea foods - that's about the poshest I've ever seen a peal served.

I would have preferred it served much more simply.


Simply bake the fish - it is a dish fit for kings or very honest men.

I think I'll keep it simple and bake it, served with salad and lemons....

Borrow a fish kettle and cook it in a court bouillon(for only a short period - some suggest simply bringing the stock to boil and then turning off the heat and leaving to cool).

Place on a platter, skin the upper side and either lay thinly sliced cucumber over it or serve as is with some hollandaise.

I considered hot smoked but it wouldn't fit in my smoker ;-)

Ended up stuffing it with fresh herbs, lemon, salt and pepper and baking it in foil. Served with slices of lemon and salad, went down a treat.

I had a look at fish kettles, can see me purchasing one of those...
