Just a few days left of my hols here in Ireland and I've still not managed a mullet. Found a wee lagoon that is stuffed full of them. They obviously feed hard when the tide provides a flow but they are there all day round even at low water. They are in easy casting reach, don't seem to get too spooked and won't take any fly that I've thrown at them

That is not strictly true - I've had three takes and briefly connected with one fish. Not sure what has done the damage - probably and Algae fly or maybe a wee shrimp imitation.
A local guy has suggested maggot fly or balck dries but they have not worked for me. I've kicked around the sea weed on the shore and not seen any maggots but there are plenty of shrimp.
Today I took a half baguette with me and tried a bread fly. It seemed pointless though, as I did not see any of the mullet touch the bread.
I know my experiance is not unusal when it comes to mullet, but if any one has any ideas about how to catch a Mullet and on what fly, then post away...
