Default Smoking!

I'll risk a few wisecracks here, but can anyone suggest somewhere which offers a smoking service for large trout? I have a 6 pounder in my freezer which I want to serve as part of a buffet for a few friends. I do have a hot smoker but it's not big enough for this, and besides it's been suggested a couple of times to me that a fish of this size would be better cold smoked.

DONT GET IT SMOKED!
Your friends will never come back!
Defrost it overnight, and oven cook whole in foil, will look, and taste a lot better than being smoked after having been frozen.
If smoked will be like burnt leather!!!

You shouldn't haven't any difficulty in finding a smokery on the coast if you 'google' the request.

Hey Bert,not sure why you think it will be like burnt leather? If you defrost the trout slowly in the fridge for about 36 hours then treat it as if it were fresh it should smoke up fine. I have a 5 pounder in the freezer that I will be smoking this weekend and I know, having done this many times, that it will be lovely! I probably would not cold smoke a pre frozen fish but hot smoked will be fine.
Skolly if the fish will not fit your smoker you can fillet the fish, leave the skin on and smoke the fillets one at a time, I do mine with a mix of brown sugar, salt, dill and single malt and they are beaut!
