when tying the water knot for droppers cant remember which tag to keep is it the one pointing to the rod or the one pointing to the point

I use the one that is the end of the main line, which is usually the one pointing away from the rod.

You keep the one pointing to the point and cut off the tag that points to the rod. Welcome to the forum.
