depends how you want to target them. if you want to try immitate naturals you can try the weed flies, and occasionally spiders. if you want to go for the bread route as i do, then its hard to beat a rabbit bread fly, this being palmored white rabbit zonker. this has proven very succesful for me down here.
to target them i tend to stick about the lower parts of the esturies over the last hour of the ebb and the first two hours of the flood. during this time the mullet tend to move back up the esturies as the mud flats flood. find a pod of fish and break up some bread into small pieces about a cm across. make them into a loose ball and throw uptide of the fish. when the mullet are feeding hard u can get some agressive takes. nw cast your bread fly uptide of the fish and wait gor a response. i prefer to let the fly sink slightly as this usually results in more positive take. if it is calm and clear then you can see the takes, if not i add a greased piece of cloro backin between leader and fly line and watch this for takes. these can be anything from a gentle sip to a rod wrenching hit
this technique has resulted in about 1050 mullet in the past 3 years, best session was 11 up to 5+lbs..thers is a misconception that mullet are a difficult fish to catch but if you get them feeding, and this is more about identifying the period of the tide than anything else, they are quite catchable..
