I used to bush-smoke trout - reduce a fire to dull embers, pile on appropriate foliage (green and damped manuka/tea-tree leaves in my case, stripped off the twigs), and cover with a wet sack.

I've used a small 'hot smoker' quite successfully on a number of occasions but this is a form of cooking and what I'd like to try at home is 'cold smoking' that cures the flesh rather than cooking it.

I've used the small 'Abu' hot smoke and oak chips for years and the results are very tasty indeed, but it's rather small so have to just do a couple of fillets at a time.

I've often fancied moving on to a larger cold smoker but I'm the only fish eater here at home !

I have built my own and it works pretty well. I have 2 chambers - 1 above the other with the smoke created in the lower one and rising through the top chamber through the fish. I have trouble getting a good smoke flow however.

The one way I have seen of getting this to work, without a smoldering fire is to get a can full of chips and plug in a soldering iron, stick it in the can and off it goes smoking the fish. I am yet to give this a try but it should produce the right results!

I have a smoke generator for cold smoking if you're looking for one.it is powered by a small pump to get the smoke into a smoke chamber. Bought it off a member here and have never used it. let me know and you can have it for the same price I paid for it.

Cold smoking is the way forward:

Any specific questions please just ask away.
