I just use a kitchen devil carving knife.
Click the image to open in full size.
As long as the blade is sharp, reasonably long & flexible that is all you want.
No need at all for an expensive "specialist" filleting knife.

i have j.martini bladed knife i have had for years. sharpens well and keeps an edge.
some cheap blades are hard to sharpen and seem too thick in the blade.

I thought that you would have had a decent fillet knife for carvingup deadbaits for all the 30lb pike you have caught

Those Gerbers are excellent value for money.

One of the best fillet knives I ever owned was a Normark which I eventually wore out.
