Water knot for me. I've found that they are stronger when tied in even no.s, ie 2 or 4 turns, why I don't know.I use the 2 turn knot for river fishing and the 4 turn for stillwaters. It's probably the easiest knot in the anglers repertoire to tie.
Ref your second point - It depends on the leaders B/S. If I'm pulling flies, I always go up a good couple of pounds. I don't think the trailing dropper leg will cause you any problems as I've done the same on many occasions. However, as fish tend to hit a pulled lure harder, it may be best to start off with a dropper free, new leader to eliminate the risk of pinging at the knot, should you get a hard take.
