I'm going up there myself next week. Checkout the local website
http://Wild Trout Fishing In Assynt
This covers South Assynt, but there are also about 200 lochs on the North Assynt ticket, some of which hold monster fish, though I've yet to catch one.
Traditional Scottish flies work fine but also take Damsel nymphs - there are some huge hatches - and mini-muddlers for the bob. (the Dunkeld MM is reliable in all conditions)
A copy of Bruce Sandison's Trout Lochs of Scotland is very helpful. You'll be close to Lexy's loch - full of good fish but can be dour. Hire the boat if poss.
Loch Crocach is great fun but again you'll need the boat and a kind westerly wind - don't attempt it in a northerly. Here's a pic to whet your appetite.
Click the image to open in full size.

Study the map, you'll find many small unnamed lochans; If there's a burn running in or out there will be fish. These waters are often sheltered when it's too rough for the big lochs.
Have fun and let us know how you get on.
PS Be prepared for midges, they're murder in August.

One last point about the smaller lochs. They look fine on the map but some are silted up and full of weeds and lilies. More than once I've hacked my way through trackless wilderness only to find a lovely little lochan that's covered in water lilies. Pretty but unfishable and precious time wasted.
There is now a solution. Google Earth has upgraded its view of this area; the detail is much better. You can actually see the lily patches, so do the mapwork then zoom in on your chosen lochs and check them out.
Assynt is a magical place, especially around midsummer. It haunts my dreams.
Be sure to stock up on pies from the Lochinver Larder.

Yes, there's a general store and chandlery by the docks. They stock a limited range of tackle and a decent selection of well tied flies, but not much in the way of leader material, so stock up on fluorocarbon if you use it 'cos you won't find it there. Sure it's ok to contact me about the maps, glad to help but I won't be telling you all my secrets.
