Default Eating Trout Other than Browns

Looking through Trout Fisherman last night there is a gallery of guys with fish they have caught and some are pretty big .Assuming that these are deid and are not destined for the cat I wondered what they do with them . I have tasted grilled wild brown and it was very very nice ( and salmon as well) but has anyone tasted rainbow cos they sure don't look very appetising but then again neither does a big cod but it is .

Rainbows vary - some are the equal of browns and wild salmon - but some are kind of muddy - I usually bake in a roasting bag.

Hi Molley

I find rainbows under 2lbs very tastie anything over this less so.

I loosley wrap in tin foil with some lemon and a little water pop in the oven for approximately 30mins.

Yeah.I could imagine the smaller ones being nicer ..That's the way I cook some fish already so I'll give it a try when I catch one .

+1. The lard-asses are not good. Had abpout a 9 pounder once that was mostly fat when I opened it up. Went in the bin. Did not look nice and I didn't want to eat it!

Jamie Oliver has some great recipes for trout, which can be used for either brown or rainbow. Can easily get them from the net. The one using ground thyme, oil a salt is particularly good,

Took me a while to find a way to cook stockies at or over 2lb with which I was really happy (and which caused my wife actually to ask for them out of the freezer).

After cleaning and beheading I cook them above a thin layer of 50% cheap white wine (Sainsbury at £2.99 - and yes - the rest does end up in the cook) 50% water, and bay leaves with added lemon, with slices of lemon and a little grated ginger in the fish in a fish poacher. A 2lb fish takes about 25 minutes. The fat drains out. Leave the fish to drain 'til cool and then skin. Serve cold with Mayonnaise - absolutely delish with salad in the summer and some hot veg such as sugar snap peas and asparagus otherwise.

Does he catch them himself in that big lake, Clavering, alongside his house............??? probably not...

hi molley
if you go to the british trout association website,there are loads of recipes for rainbow trout.
most of them are easy to follow, and taste delicious
