Looking for a knife that is best for filleting trout and bass. Would prefer something thats folds up or at least in a safe sheath.

My own work knives are Global knives, great quality. I've also have a Normak fillet knife, with the sure grip handle, i think it was around £30, a few years back. The Global will give you better flex, both are able to hold a good edge. The Global range in price £60-100.

Lighthouse, they are well worth the money. As you rightly point out, a pleasure to work with. No point in buying a cheap knife.

Rapala's soft grips are nice mid priced knifes,they also do a camping version which is a fold away type.

Its funny but just because a knife has a cheap or dear price tag it doesn't mean it will suit you, ask your wife! I will bet she has a favorite veg knife and no other is quite the same.
See if you can get hold of some to feel in your hands, if it feels right grab it.
Bit like my Taylors eye witness pen knife it feels right.
What I will say is a more pricey one will more than likely have better steel in it, and will sharpen and keep a better edge.

Do you ever have to have the edge reground ?

Just wondering how long you can keep an edge on a good knife just using a steel or the like.

Most Chefs will have their knives ground ,but their usage is much higher than your average non commercial user.
When I was a cook (never thought of myself as a chef though have the qualifications from an apprenticeship back in the 60s )knives would be ground 3-4 times a year,now for domestic work I maintain them with regular use of a good steel and occasional use of a stone or more recently one of SKBs hook sharpeners ,those put a nice edge back on quickly .
