I think the use of these originally came from the US, where they fish eggs for pacific salmon or steelies/rainbows/char gorging on the eggs from the salmon run - so basically fast running water.
The time I fished them, I fished a single egg, and off the bend of the hook was attached a short 12"-14" length of mono, and to that was attached a small nymph, like a Teeny nymph. This whole rig was fished in very fast water with a very fast section of sinktip (Teeny Mini-tip). It was good for char, salmon and also resident rainbows. I know it's a standard for steelies as well, and I dished the same rig above except using a #2/#4 Steelhead wet but on a longer (and stronger, ie 20lb!) section attached to the egg.
Some guys were changing the egg to a solid or opaque egg bead, coloured with various nail varnishes, and this is so successful that it's banned in some areas.
A few years back I took a beginner who wanted to learn to fly fish at a local pond, and the owner said eggs were good. I dug up the same eggs I used probably 15 years earlier, tied it on and chucked it out, left it for half a minutes, gave it a few pulls, and *whump*..
