i have a hot smoker easy to use and masks any earthy taste in the fish.Cold smoking is another ballgame

hot smokers are about£40 or make your own
worth a look in the archives on this subject

all the best Nick

The Snowbee smoker is pretty good.I have seen one used on many occasions.I have the old fashioned Brookes.works well but is a bit slow(1 burner)
