Default Non fishing knots

Would someone please enlighten me about this.

I have tried tying bowlines and sheetbends in mono and both work well, these 2 have quite high break strains so why not? I can tie these in seconsd but struggle with other ones

The double blood knot or surgeons could be done with a sheet bend, doubled for different diameters.

And a a bowstring knot, its the closest googleable name I could find for the knot I was thinking of instead of a perfection or surgeon loop
