Smile Smoking Fish

Hi all,
Santa was very good to me this year and provided me a food smoker.
My plan is to start smoking Rainbow trout (My Neighbours are going to love me!!!).
The type of smoker I have is based on two 25ltr drums which are extendable dependant on size of fish. There is a fire box at the base and a steel plate just above for the sawdust/wood chips. These are German made and can be sourced on e-Bay.
Any hints/tips/links and recipes would all be appreciated. Has any member had any experience of this type of smoker?
Many thanks.

Eagle, if you search the forums you'll find smoking has been covered extensively. Also try a google search. Not trying to put a damper on your question but the subject has come up quite a bit in the past.

A Good Smoker

hot smoking trout

Loads more just type in smokers in the search box.

Hi All,
Many thanks for all the help and humerous comments regarding smoking fish. I will try those links that Black-Don and Snaggit have recommended. I do like the jet-powered smoker on you-tube!!!
Biggest problem I have is locating Charcoal at this time of year. Everyone looks at you as if you where mad. Well they could be right!!

Tight Lines & Happy New Year
