THEY DO!
Apart from the darker meat that runs along top of back bone!
Is a bit bitter.
Rest of flesh is white and very light flavour, good with orange sauce!

IMO grayling tastes better than trout - lovely delicate white flesh. Makes a nice treat once or twice a year . Marinated quickly in lemon and herbs then grilled it can't be beat. Dunno about the orange sauce idea though .

Just to echo christy27 point of view it seems it's ok for a respected angler to do this but not a tv chef; so this would apply to the new show Countrywise Kitchen where they caught a brownie and a perch and cooked them by the lakeside.

Perch are ok. Good firm flesh, but after cleaning them, soak them overnight in salty water to get rid of a slightly muddy flavour.

Wouldn't have minded seeing that. Does anyone know if it is to be shown again and if so what was the program called?
Cheers Ray
