Sometimes at night it can something as straight forward as the same fly you use in the day. A lot depends on the light levels (it's never truly dark at night) and from a fishes perspective they're often looking up at a light background and fish like Bass have fine tuned eyesight for hunting at night.
On a bright, moonlit night then white can be a good colour, but on darker moonless or cloud covered nights then dark flies are the way to go. I firmly believe that fish may not be able to detect colour in the dark, but they can discern shades so I always tie in a lighter belly of either orange or chartruese under black. Profile and silhouette are also important and my favourite patterns for a dark night are fully dressed clousers, half n halves, deceivers, Tabory's snake fly, Ray's fly (not Dai's fly

). Another option for those flat calm, balmy evenings is to fish a fly on the surface. You can use poppers, but to my mind you can't work a popper fast enough on a fly rod, so I prefer either a gurgler or a Fag Ash Lil, fished slow to create a subtle wake or if fishing a fast lateral current just fish them on the swing keeping a tight line ( similar to 'wogging' for pacific salmon).
