What would you say is your most popular grayling fly.

Sawyer's Grayling (killer) bug used to be tremendous fun if you sparsely feed the swim with maggots.
Hooks:
14-18
Silk:
Olive or brown
Underbody:
Copper or lead wire
Body:
Chadwick's darning wool #477 or 454 nowadays try Veniard's Killer bug wool http://tinyurl.com/m6skzd

Other than that, a size 14 hacklepoint coachman used to work wonders on the Test at the Broadlands estate.
Hook:
10-14
Silk:
Brown
Body:
Peacock herl
Wings:
White cock or hen hacklepoints
Hackle:
Ginger or red cock

I've had Grayling there well over 1lb on both of these flies.

Your correct!! A Pink Shrimp or Bug tied on a B100 size 14 or 16!!

2, a gold head hares ear or PT gold head / or copper bead!

3, the olive F-fly fished dry/or a shuttlecock buzzer CDC, black or olive dry-also a klink, in various sizes! There's so many! and if presented correctly, they'll come up for the dry-fly even in the coldest winter days!
