If you are new to fly tying go for either Peter Gathercoles "Fly tying bible or "Fly tying for beginners" depending on your level,
As an intermediate to advanced tier then the book recommended above is good but limited to Irish patterns. You could also look at Scholmeyer and Leesons benchside reference book for all the techniques ever thought of. It is a reference book but is fantastically thorough and easy to understand.
If none of those take your fance have a look at Paul Morgans site, he's always got some good stuff
