Default Capes and Saddles?

As someone who ties now and then and not very well, I am always confused about the subject of capes and saddles. When do I need a grizzly prograde this or a furnace metz that? I have obtained three capes so far and have generally been disappointed, mainly because the feathers are not quite what I want (colour or size). So does anyone know of a good summary of what capes/saddles does what? It seems an enormous subject. All I know is you can soon spend a lot of money and not get what you really want, at least buying on the net. Help appreciated.
