Fulling Mill, Kamasan, Tiemco, Hayabusa, Patridge are all popular but each tyer may have their favourite brand or even a style of hook from certain manufacturers.
I don't know of a book that will tell you in detail about hooks specifically, most tying books have an intro about techniques, tools, hooks and materials etc and will specify normally what type of hooks you need for a pattern, whether it be a dry fly hook, nymph, longshank, grub etc.
Have a look in here on the classics section and do a search for step by step, also look in the features under fly tying, there are a good few step by steps.
Hooks can be split very generally into trout, salmon and sea.
Trout hooks, wet, dry, nymph and lure.
Wet, heavy gauge, medium gauge, light gauge.
Dry, tend to be lighter gauge, up eye, down eye.
Lure, longer shank, doan eye, straight eye, 2x, 3x, 4x.
I could go on forever with bend, barb, metal, forged etc.
Have a look in some of the shops that sell materials most manufacturers now put on their bokes what the hook is for and start reading and looking on all forums you can.
