Stiffness!

Cock has stiff hackles (as you would expect ) and hen has softer hackles.

The hackles are applied differently in dressings to achieve differing motions in the water.

Sorry forgot to say about saddles etc.

The capes and saddles of hens and cocks are the number one hackle providers. Imagine a chicken, the cape is the collection of feathers around the front of the neck. It is cut off whole and sold in its natural form (feather on skin). The saddle on the other hand is taken from the back of the bird. Saddle, neck, hen and cock have different uses and come in different grades.

Hope that helps a bit more!

Hi Oliver,

Capes provide a wide range of hackle sizes whereas saddles provide hackles in narrower range of sizes. Good suppliers will advise you on the range of hook sizes for which any particular cape or saddle will be suitable. Look on the Lakeland Fly Tying site to see what I mean.

You might find it helpful to read the Fly Tying Stuff (a collection of articles) on David Rice Fly Tying.

What sort of flies are you intending to tie?

Oliver,

A good genetic cock cape will provide the full range of hackle sizes that you require. Capes with size 22 hackles are likely to be expensive so you might consider packets of selected genetic hackles here. Explain what you want to a good supplier and he will put you right.
