I fish both largemouth and smallmouth bass. Both provide good sport on both the fly and spinning rod. As a practical matter, you need to fish from a boat. Bass are generally territorial, so you need to bring the food to them and cover lots of water.
There is plenty of guided largemouth bass fishing in Florida. Avoid the guides that work for the Disney resorts, they charge outrageous tourist prices for what is basically the US equivalent of stockie bashing in the UK.
If you're thinking of DIY fishing, be very careful. Wherever there is water in Florida, there are gators. Generally, I'd say it is not advisable to fish on your own unless you have good local information that you know is reliable.
Depending on where you're staying, don't rule out saltwater action on the fly. Setting aside the flats fishing, there is much more fun to be had by targeting species like ladyfish tarpon and redfish. Don't get too excited when you see it advertised that "sea trout" are on the list of possible species. They're sea trout captain, but not as you know them. Again, you'll need a guide and a boat for most of it, but the action can be very good with hard fighting fish.
