Hi Stuart/
Photoshop's "Photomerge", set to auto. It gives a good result most times. Main problem is keeping the thing you are panning on a level horizon. It usually keeps stepping down or up as you go across. The one here kept stepping down (going left to right), so you end up with a 'staircase' and have to twist it to make a rectangle - and then trim all the jaggy edges off with the crop tool. Prestonfield House in the top right corner gives the game away that it's all a bit skewed by the time it gets there.
The key really is to have everything in manual mode. Pick a focal point, pick an aperture, pick a shutter speed, (and if you are not shooting RAWs) pick a white balance, and leave
nothing on the camera on 'auto'. That way, as Eric Morecambe said, you can't see the join
Oh, and keep to an overlap of about one third between each frame, so the software has plenty material to work with when it is stitching.
