Default Smoked Trout,from fishery to plate.

I caught this trout a few weeks ago from Rosslynlee Fishery Midlothian,I don't usually take fish home, as I haven't ate trout for years after going off it, but I thought I may give trout another go and put it in the freezer.

Last week I popped into my local fishmonger to buy some smoked haddock and got talking to the fishmonger about smoking fish, he told me that he smoked his fish on the premises, and he reguarly smoked fish for Salmon fishers.
I told him I had this trout in the freezer, and asked if he could smoke it, no problem he said just bring it in, two days later this was the result.

I have to say this is the best trout I have ever tasted, just like smoked Salmon, probably better.

If you fancy a different way to eat your catch I can highly recommend smoking your catch, and not as expensive as you might think.
